Indian cuisine is as truly diverse as the country itself, probably more diverse than most other cusines. The religious diversity contained within the country is widely considered to be one of the contributing factors to the diversity of indian cusine. From the northern area bordering the himmalayan mountains where no onions are used to the southern areas like Kerla where the truly firey curries originate.
Majorty of the normal dishes we associate with indian cusine, whilst having their origins in India, are British creation. The classic example is chicken tikka mussala.
One of the building blocks of Indian cusine is the spice 'garam massala' more accurately a combination of spices which give the characteristics of the curry created. Our recipe was given to us by a close friend and comes from the Kasmiri region of northern India.
