Indian food is as diverse as the country it originates from. India is one of the most culturaly diverse countries in the world and indian food mimics this diversity. As for a chiken tikka massala or a madras curry in india and you will probably get a blank response. These are british creations and not authentic indian food.

From northern india where they pride thamselves on their breads like chapati or paratha, with delicately spiced lentil and vegetable dishes, and youghurt marinated meat dishes, to western india where coconut is extensively used, indian food is as different as say french and english.

Many people think that indian food is difficult to cook, but suprisingly, it is quite simple. Sure there are a few strange ingredients to get to grips with, and also mastering the art of the chilli is always an adventure.
