I’m excited by the prospect of Christmas with a love-hate relationship.
On one hand, people seem to be excited and have real hope for a perfect Christmas Day, which for me can be somewhat of a let-down. This is where the hate arrives. I thoroughly love cooking all year round except for Christmas day where I feel I have to outperform in the kitchen to achieve Delia Smith perfection.
I have tried all the different options to get around this problem, such as boiled eggs and soldiers! I tried flying off to summer climes where the sun was welcome, but I pined for home which is where I find most people want to be.
I have realised that Christmas is not what the ad men tell me I should be having but what make the family and me happy.
These are some of my recipes for Christmas that also help prevent any waste.

Brussels Sprouts
If you have quite a few steamed or boiled brussel sprouts left over simply cut them into very small pieces. Make a thick béchamel sauce, add Brussels to sauce. Line a greased baking dish with breadcrumbs place sauce into dish and cover with more breadcrumbs. Cook in oven for approx 20-30 minutes on 180oC. Equally good hot or cold.
