Ingredients:
1x 330ml bottle of strong lager
grated rind and juice of 1 lime
2 garlic cloves crushed
2 teaspoons chopped fresh thyme
2 tablespoons dark muscovado sugar
1 hot smoked chilli crushed, or 1 teaspoon chilli flakes
salt and freshly ground black pepper
1 sheet pork ribs
Preparation:
Mix together the beer, lime rind and juice, garlic, thyme, sugar, chilli and plenty of seasoning.Add the ribs to the beer mixture and leave to marinate for 8-24 hours.Cook the rack of ribs over a medium barbecue, turning occasionally for 25-35 minutes until well browned and cooked through.
