Cuban-style marinated lamb

Cuba, that forgotten piece of the carribean. I was planning a carribean styled meal a few months ago and dug this recipe for Cuban-style marinated lamb out from the BBC food website a few moths ago I gave it a go.. What can I say it needs no alteration. The combinations are very unusal but they work. Give it a go. I never thought I would say it about Antony Worrall Thompson but you have got it right this time.

Cuban-style marinated lambIngredients
4 tbsp Seville orange marmalade
3 tbsp water
2 oranges, zest only
2 tbsp oregano, finely chopped
6 cloves garlic, finely chopped
2 tsp cayenne pepper
2 tbsp vegetable oil
1.7kg/3lb 12oz butterflied leg of lamb, (weight after bones removed)
225ml/8fl oz cola

Method
1. Gently heat the marmalade and water together in a pan, stirring until the marmalade has melted.
2. Allow to cool, then mix with the orange zest, oregano, garlic, cayenne and oil.
3. Rub the marinade into the lamb.
4. Place into a strong plastic bag, and place the bag into a bowl.
5. Pour the cola around the meat.
6. Tie the top of the bag securely. NB: If you were to place the meat in a bowl there would not be sufficient cola to cover the meat, so pouring the cola in the bag means that you can massage and turn the meat easily while it is marinating in the fridge. Marinate for at least two hours.
7. Remove the meat from the fridge about half an hour in advance. Remove from the plastic bag just before cooking.
8. Place lamb on the pre-heated barbecue and grill for about 1 hour or until tender.
9. Allow to rest for 15 minutes, then carve and serve.
