Kebab Feast

Ingredients:
Kebab FeastFor Lamb Kofta's
900g (2lb) Minced Lamb
2 onions finely grated
6 Garlic cloves crushed
1 green Chilli finely chopped
1 small bunch coriander finely chopped
Oil for brushing
For Shish Kebabs
1 kg. lamb meat (from thigh or shoulder) cut into small pieces 4 tomatoes 2 green peppers

Prepararion:
Kofta Kebabs:
If you are using a charcoal barbecue, light it 30-40 minutes before you want to start cooking. If you are using a gas barbecue, light it 10 minutes beforehand. If you are using a cast iron griddle pan leave it to get hot over a high heat, then lower the heat slightly for a few minutes before cooking. Cover 8 bamboo skewers with cold water and leave them to soak.Put the minced lamb, onions, garlic, chilli and coriander into a bowl add 1 teaspoon of salt and some freshly ground black pepper. Mix together with your hands until the mixture has bound together. Divide into 8 and the mould it into long sausage shapes around the drained bamboo skewers.Brush the kofta generously with oil and lightly oil the bars of the barbecue or griddle. Cook for 5 minutes turning them now and then, until browned all over and cooked through.
Shish Kebabs
Cut tomatoes into large chunks removing the inner soft part. Cut the green peppers in half, remove the seeds and cut into smaller pieces. Skewer a piece of meat, tomato, and green pepper succesively. Cook on a barbecue, 3 to 4 minutes each side.
