Turkey Roulade

Ingredients

1 breast of turkey flattened out
wilted spinach, mortadella, very thin omelette (enough to cover turkey breast)
1 celery stick
1 carrot
1 white onion
A few black peppercorns

Method

Lay out flattened turkey breast and season with salt. Place mortadella, spinach and omelette in layers onto turkey breast and roll up like a sausage. Wrap tightly in a cloth and tie with string. Place in pan of boiling water with the celery, carrot, onion and black peppercorns. Cook for about 20 minutes, try to avoid over cooking so the turkey stays moist and juicy. This dish is also wonderful cold.
