Pasta Napolitana

Pasta NapoletanaNapolitana sauce, the simplest of all the tomato sauces, is also a base for many others. Like much of Italian cooking relies on very few ingredients letting them speak for themselves.

Ingredients:
1 medium onion
6 tablespoons extra virgin olive oil
400g tin of chopped tomatoes
6 basil leaves
sea salt
freshly ground black pepper

Preparation
Fry the onion gently in the olive oil until soft without colouring. Add the tomatoes and simmer gently for 10 minutes. Stir in the basil and salt and pepper to taste.
