Strawberry Jelly

Strawberry JellyThis Italian recipe for strawberry jelly looked so easy I just had to try it. I think you will agree, it tastes delicious. You might like to try substituting strawberries for raspberries, or blackberries for a different jelly. Use instead of jam.

Method

Hull the strawberries, place them in a saucepan and cook over a low heat, without adding any liquid and stirring constantly for 8 minutes. Place a large sieve, or suspend a jelly bag, over a bowl, pour in the strawberries and leave to drain. DO NOT SQUEEZE THE BAG if you want a clear jelly.

When all the juice has collected, weigh it and add the same weight of sugar. Pour the juice into a saucepan and bring to the boil over a medium heat, stirring constantly. When the juice comes to the boil, stop stirring, skim and cook for exactly 3 more minutes. Remove from the heat and leave to cool slightly, then ladle the warm jelly into warm, sterilized glass jars and leave to cool. Seal the jars and store in a cool, dry place.
