For the squidPreparation:
1. Heat a griddle pan until hot. Brush the pan with olive oil and then griddle the squid, season to taste and cook for 2-3 minutes, turning once.
2. Place the garlic, parsley, salt, chilli flakes and dash of olive oil into a small bowl and mix together well.
3. Meanwhile, heat a separate griddle pan and chargrill the carrots for 3-4 minutes, turning occasionally or until tender.
4. To serve, transfer the squid to a serving plate and pour the dressing over. Serve the carrots alongside.
